Garbanzo Salad

Sun dried tomatoes
Garlic vinaigrette 2 Tablespoon
Wine cured salami 4 Ounce , sliced into very thin rounds
Cooked garbanzo beans 1 Cup (16 tbs) , rinsed and drained
Cucumber 1 Large , peeled and cut into 1/2 inch chunks
Green onions 4 , thinly sliced
Yogurt 2/3 Cup (10.67 tbs)



1. Marinate the tomatoes in vinaigrette for about 15 minutes.

2. Add salami, beans, half the cucumber, and half the onions; mix well.

3. In a blender container, put other half of the cucumber, the remaining onion, yogurt and 1 tablespoon of vinaigrette from the salad bowl; blender to a smooth mixture.


4. In a large serving bowl, arrange the salad and pour the dressing and toss gently to coat evenly. Serve immediately.
