Pickled Three Bean Salad

Ingredients

Green beans 1 1/2 Pound
Wax beans 1 1/2 Pound
Lima beans 1 Pound
Sliced celery 2 Cup (32 tbs)
Onion 8 Ounce , sliced (1 Onion)
Diced sweet red pepper 1 Cup (16 tbs)
Sugar 2 1/2 Cup (40 tbs)
Vinegar 3 Cup (48 tbs)
Water 1 1/4 Cup (20 tbs)
Mustard seed 1 Tablespoon
Celery seed 1 Teaspoon
Canning salt 4 Teaspoon

Directions

Wash beans; trim ends; cut into 1 1/2-inch pieces.

Shell lima beans.

Combine beans, celery, onion and pepper in a large sauce pot.

Cover with boiling water; cook 7 to 8 minutes.

Drain.

Bring sugar, vinegar, water, mustard seed, celery seed and salt to a boil.

Simmer 15 minutes.

Add drained bean mixture.

Heat to a boil.

Pack hot into hot jars, leaving 1/4 inch head space.

Remove air bubbles.

Adjust caps.

Process 15 minutes in boiling water bath.
