This salad is so easy and is deeeeelicious! A must try for sure. Salads are great to make ahead of time, assemble the salad and keep the dressing in a separate container and when youre ready to eat, just toss together.
|Baby spinach||4 Cup (64 tbs) (organic)|
|Red onions||1/2 , sliced in rings|
|Oranges||2 , cut in segments|
|Avocado||1 , sliced|
|Candied pecans||1 Cup (16 tbs) , roughly chopped (or nuts of your choice) (Optional)|
|For salad dressing|
|Fresh orange juice||1/4 Cup (4 tbs) (freshly squeezed)|
|Dijon mustard||1 Teaspoon|
|Extra virgin olive oil||1/2 Cup (8 tbs)|
1. In a salad bowl put together spinach, red onion slices, orange segments, avocado slices, and candied pecans.
2. In a small bowl, mix together the orange juice, Dijon mustard, salt, and pepper.
3. Stream in olive oil and whisk until incorporated.
4. When ready to serve stream the dressing all over the salad.
5. Serve as desired.
You can add in strawberry or mandarin oranges.
