Celery is something that people either love or hate, but we have a recipe that everyone is going to love! It's crunchy, healthy, and crisp. Great for any time of the year!
Olive oil | 1/2 Cup (8 tbs) | |
Grated lemon zest | 2 Teaspoon | |
Fresh squeezed lemon juice | 1/4 Cup (4 tbs) , divided (((1 tablespoon extra))) | |
Minced shallots | 3 Tablespoon | |
Celery seed | 1 Teaspoon | |
Celery salt | 1/2 Teaspoon | |
Anchovy paste | 1/2 Teaspoon | |
Dijon mustard | 1 Tablespoon | |
Salt | To Taste | |
Pepper | To Taste | |
Celery | 4 Ounce , thinly sliced (((2 bunches))) | |
Parmesan cheese | 4 Ounce , shaved | |
Toasted walnuts | 1 Cup (16 tbs) | |
Parsley leaves | 2 Tablespoon , roughly chopped |
MAKING:
In a bowl, combine olive oil, lemon zest, ¼ cup lemon juice, shallots, celery seed, celery salt, anchovy paste, Dijon mustard, salt, pepper and whisk well.
Pour over a large bowl with celery, parsley, walnuts and parmesan.
Toss well and refrigerate for 1 hour.
