How To Make Corn Salad

Make corn salad with fresh summer corn! Fresh corn quickly roasted in a skillet turns into a delicious side dish or serve it with tortilla chips.

Ingredients

Sweet corn ears 3 , kernels cut from cob
Oil 1 Teaspoon
Serrano pepper 1
Green onions 2
Roma tomato 1 , diced
Garlic 1 Clove (5 gm) , minced
Lime juice 1 Tablespoon
Minced cilantro 2 Tablespoon
Salt 1 Teaspoon
Beans 1 Cup (16 tbs) , rinsed and drained (1 cup, black or kidney beans)
Cotija cheese 1/2 Cup (8 tbs) (optional)

Directions

MAKES 3 CUPS:

MAKING:

1.Shuck the corn and rub with oil.

2.Sear in a hot skillet and grill for 2 minutes.

3.Blister Serrano and green onions and dice it.

4.Cut kernals from cob.

5.In a large bowl, combine remaining ingredients and stir well.

SERVING:

6.Serve either chill or immediately and enjoy!
