Make corn salad with fresh summer corn! Fresh corn quickly roasted in a skillet turns into a delicious side dish or serve it with tortilla chips.
Sweet corn ears | 3 , kernels cut from cob | |
Oil | 1 Teaspoon | |
Serrano pepper | 1 | |
Green onions | 2 | |
Roma tomato | 1 , diced | |
Garlic | 1 Clove (5 gm) , minced | |
Lime juice | 1 Tablespoon | |
Minced cilantro | 2 Tablespoon | |
Salt | 1 Teaspoon | |
Beans | 1 Cup (16 tbs) , rinsed and drained (1 cup, black or kidney beans) | |
Cotija cheese | 1/2 Cup (8 tbs) (optional) |
MAKES 3 CUPS:
MAKING:
1.Shuck the corn and rub with oil.
2.Sear in a hot skillet and grill for 2 minutes.
3.Blister Serrano and green onions and dice it.
4.Cut kernals from cob.
5.In a large bowl, combine remaining ingredients and stir well.
SERVING:
6.Serve either chill or immediately and enjoy!
