Betty's Chopped Lettuce Salad with Fried Chicken

Betty demonstrates how to make a Chopped Lettuce Salad with Fried Chicken. This is a hearty mixed lettuce salad containing pineapple, dried blueberries, almonds, and Swiss cheese, topped with fried chicken tender slices and boiled egg slices, drizzled with poppy seed dressing.


Romaine lettuce 2 1/2 Cup (40 tbs) (chopped into 1
Green leaf lettuce 2 1/2 Cup (40 tbs) (chopped into 1
Canned pineapple tidbits 3/4 Cup (12 tbs) , drained ((juice not needed))
Dried blueberries 3/4 Cup (12 tbs)
Salted roasted almonds 3/4 Cup (12 tbs)
Swiss cheese cubes 3/4 Cup (12 tbs)
Chicken tenders 2 , fry (1 or 2 per serving, sliced
Boiled egg 2 ( to 1 boiled egg per serving, sliced)
Poppy seed dressing To Taste (See Bettys Poppy Seed Dressing)



Place lettuce in large salad bowl. Toss. Add pineapple, blueberries, almonds, and cheese. Toss.


Serve onto serving-size salad bowl or plate. Top with 1 or 2 fried chicken tenders, sliced, and to 1 boiled egg, sliced. Drizzle with poppy seed dressing, as desired.

Serve immediately with slice of Italian and French bread.
