Pomegranate Cous Cous Salad

Pomegranate Cous Cous Salad is a fabulously festive side dish, perfect for Christmas or any time of year! Cous Cous is combined with cucumber, cherry tomatoes, pomegranate and fresh parsley. A splash of extra virgin olive oil brings everything together to make a gloriously simple salad that everyone will enjoy - give it a go!

Ingredients

Cous cous 2 Cup (32 tbs)
Boiling water 2 Cup (32 tbs)
Cucumber 1 , diced (Continental)
Cherry tomatoes 250 Gram , quartered
Pomegranate 1 Large
Chopped flat leaf parsley 1 Cup (16 tbs)
Lightly toasted sesame seeds 2 Tablespoon
Extra virgin olive oil 1/3 Cup (5.33 tbs)
Salt To Taste
Pepper To Taste

Directions

GETTING READY:

In a large bowl, combine cous cous and boiling water.

Cover with plastic wrap and allow to sit for 5 minutes.

MAKING:                        

Fluff the cous cous using fork.

Transfer to a large bowl and add cucumber, cherry tomatoes, parsley, pomegranate, olive oil, sesame seeds, salt, pepper and toss well.

 

SERVING:                       

Serve and enjoy!
