Salad - Tomato, Cucumber and Avocado Salad

This is one of my favorite salads because it is just so easy to make and it is so fresh and flavorful.

Ingredients

For salad
Tomatoes 2 Large , chopped
Seedless cucumber 1 , chopped
Red onion 1/2 Small , diced small
Avocado 1 , chopped
Feta 1/3 Cup (5.33 tbs)
For vinaigrette
Garlic 1 Clove (5 gm) , minced
Fresh oregano 1 Teaspoon , chopped
Juice of lemon 1
Extra virgin olive oil 1/4 Cup (4 tbs)
Salt and pepper To Taste

Directions

MAKING

In a bowl add the chopped tomato, cucumber, red onion, avocado, and feta. Set aside.

For vinaigrette – In a smaller bowl mix together the garlic, oregano, lemon juice, salt, and pepper. Slowly add your olive oil while whisking.

Add the lemon vinaigrette to the salad and stir to combine.

SERVING

Drizzle some more vinaigrette if required and serve.
