Betty demonstrates how to make a Tomato, Cucumber, and Avocado Salad. This is a healthy salad consisting of tomato, cucumber, avocado, red onion, and cilantro with a light lemon-olive oil dressing.
|Roma tomatoes||1 Pound , chop|
|Cucumber||1 Medium , chop|
|Red onion||1/2 Medium , chop|
|Avocados||2 , chop|
|Fresh cilantro||1/4 Cup (4 tbs) , chop|
|Olive oil||2 Tablespoon (light tasting)|
|Lemon juice||2 Tablespoon|
|Coarse sea salt||To Taste (freshly ground)|
|Freshly ground black peppercorns||To Taste|
Place prepared tomatoes, cucumber, avocadoes, red onion, and cilantro in large salad bowl.
Drizzle with olive oil and lemon juice.
Season with freshly ground salt and pepper. Toss gently.
Serve immediately or cover with plastic wrap and refrigerate until serving time. This is a great, healthy salad. Enjoy!
