Betty's Tomato, Cucumber, and Avocado Salad

Betty demonstrates how to make a Tomato, Cucumber, and Avocado Salad. This is a healthy salad consisting of tomato, cucumber, avocado, red onion, and cilantro with a light lemon-olive oil dressing.


Roma tomatoes 1 Pound , chop
Cucumber 1 Medium , chop
Red onion 1/2 Medium , chop
Avocados 2 , chop
Fresh cilantro 1/4 Cup (4 tbs) , chop
Olive oil 2 Tablespoon (light tasting)
Lemon juice 2 Tablespoon
Coarse sea salt To Taste (freshly ground)
Freshly ground black peppercorns To Taste



Place prepared tomatoes, cucumber, avocadoes, red onion, and cilantro in large salad bowl. 

Drizzle with olive oil and lemon juice. 

Season with freshly ground salt and pepper. Toss gently. 


Serve immediately or cover with plastic wrap and refrigerate until serving time. This is a great, healthy salad. Enjoy!
