Betty's Orange Carrot Sunshine Salad

Betty demonstrates how to make Orange Carrot Sunshine Salad. This is an orange gelatin salad that contains shredded carrots, crushed pineapple, and chopped pecans. It is dramatic and delicious!


Jello 1/3 Ounce (orange flavor)
Boiling water 1 Cup (16 tbs)
Crushed pineapple can 8 Ounce
Vinegar 1 Tablespoon
Salt 1/4 Teaspoon
Shredded carrots 1 Cup (16 tbs)
Chopped pecans 1/4 Cup (4 tbs)



Dissolve orange Jello in boiling water. 

Drain crushed pineapple, reserving juice. 

Add water to reserved pineapple juice to make slightly less than 1 cup. 

Add to Jello mixture, along with vinegar and salt. 

Stir well and pour into nice serving bowl. Cover with plastic wrap and chill until partially set. 

Fold in crushed pineapple, shredded carrots, and chopped pecans (pecans are optional). 

Cover with plastic wrap and chill until firm. 


Spoon onto lettuce leaves with some mini carrots sticks and a sprig of mint, if desired. (Optional)
