Spinach Salad with Maple Bacon Dressing. Warm salad with spinach, broccoli and bacon!
Fresh spinach | 6 Ounce , washed and dried, torn into into bite | |
Bacon slices | 4 , chopped | |
Diced onion | 1/2 Cup (8 tbs) | |
Small broccoli florets | 2 Cup (32 tbs) | |
Olive oil | 1 Tablespoon | |
Vinegar | 2 Tablespoon (sherry, red wine, or cider vinegar) | |
Maple syrup | 2 Teaspoon | |
Black pepper | To Taste |
MAKING:
1.In a skillet, cook bacon over medium heat. Stir frequently for about 10 minutes or until browned.
2.Transfer bacon bits to a small bowl and sauté onions in remaining fat for 5 minutes or until soft.
3.Add broccoli and cook for 2-3 minutes.
4.Move all ingredients to one side of the pan and add olive oil to remaining fat to make 2 tablespoons of fat.
5.Add vinegar, maple syrup and stir well. Scrape the pan completely.
6.Pour the hot mixture over spinach and toss well.
7.Season with pepper to taste.
SERVING:
