Spinach Salad with Maple Bacon Dressing. Warm salad with spinach, broccoli and bacon!
|Fresh spinach||6 Ounce , washed and dried, torn into into bite|
|Bacon slices||4 , chopped|
|Diced onion||1/2 Cup (8 tbs)|
|Small broccoli florets||2 Cup (32 tbs)|
|Olive oil||1 Tablespoon|
|Vinegar||2 Tablespoon (sherry, red wine, or cider vinegar)|
|Maple syrup||2 Teaspoon|
|Black pepper||To Taste|
1.In a skillet, cook bacon over medium heat. Stir frequently for about 10 minutes or until browned.
2.Transfer bacon bits to a small bowl and sauté onions in remaining fat for 5 minutes or until soft.
3.Add broccoli and cook for 2-3 minutes.
4.Move all ingredients to one side of the pan and add olive oil to remaining fat to make 2 tablespoons of fat.
5.Add vinegar, maple syrup and stir well. Scrape the pan completely.
6.Pour the hot mixture over spinach and toss well.
7.Season with pepper to taste.
8.Serve and enjoy!
