Betty demonstrates how to make a Honeydew Cucumber Salad. This is a cool and refreshing summer salad.
|Honeydew melon||1/2 Medium (peeled, seeded, and cut into 3/4|
|Cucumber||1 Medium (unpeeled and sliced in 1/8|
|Red onion||1/2 Medium , finely chopped|
|Fresh dill||1/4 Cup (4 tbs) , chopped|
|Feta cheese||4 Ounce , crumbled|
|Lemon juice||2 Tablespoon|
|Olive oil||2 Tablespoon (light tasting)|
In a large bowl, place prepared honeydew melon, cucumber, red onion, dill, and feta cheese. Toss lightly.
In a small bowl, whisk together lemon juice, olive oil, and honey.
Pour whisked dressing over melon, cucumber, onion, and cheese mixture.
Toss gently, but thoroughly.
Serve at once, or cover with plastic wrap and refrigerate until serving time.
