Turkey Taco Salad

This turkey taco salad recipe is delicious and healthy, too! Perfect for an easy and quick dinner or lunch.

Ingredients

Oil 1 Teaspoon
Diced tomatillos 1 Cup (16 tbs)
Diced onion 1/2 Cup (8 tbs)
Jalapeno 1 , minced (optional)
Garlic 2 Teaspoon
Salt 1/2 Teaspoon
Chili powder 1 Tablespoon
Ground cumin 1 Teaspoon
Ground cinnamon 1 Pinch
Ground turkey breast 1 Pound
Chicken broth 1/2 Cup (8 tbs)
Torn lettuce leaves 8 Cup (128 tbs)
Shredded cabbage 1 Cup (16 tbs)
Salsa 1/2 Cup (8 tbs)
Sliced vegetables 1/2 Cup (8 tbs) (Sliced radishes, cucumber, tomatoes, avocado as desired)

Directions

MAKING:

1.Heat a skillet with oil.

2.Add tomatillos, onion, jalapenos and sauté until softened.

3.Add garlic, chili powder, cumin, cinnamon and cook for a minute.

4.Move the vegetable mixture to edges of skillet and add turkey. Break the meat into small chunks and mix well.

5.Add chicken broth, stir well and cook for 5 minutes or until the meat gets well cooked. Turn off the heat.

6.Arrange lettuce leaves and cabbages into 4 bowls and top with desired vegetable slices.

7.Place turkey mixture over it and top with salsa or any desired topping.

SERVING:

8.Serve as salad or with taco and enjoy!
