Green pea salad with goat cheese and mint salad is a classic pea salad.
|Shelled peas||1/2 Pound (about 2 cups, frozen or fresh)|
|Celery stalk||1 , finely diced|
|Fresh minced mint||1 Teaspoon|
|Fresh minced parsley||2 Tablespoon|
|Lemon juice||1 Teaspoon|
|Crumbled goat cheese||1/2 Cup (8 tbs)|
In a colander, place peas and pour boiling water over it. Allow to drain.
In a large bowl, combine celery stalk, minced mint, parsley, salt, lemon juice, goat cheese and mix well.
Combine goat cheese mixture with peas.
Serve and enjoy!
