Green Pea Salad With Goat Cheese

Green pea salad with goat cheese and mint salad is a classic pea salad.


Shelled peas 1/2 Pound ((about 2 cups, frozen or fresh))
Celery stalk 1 , finely diced
Fresh minced mint 1 Teaspoon
Fresh minced parsley 2 Tablespoon
Salt 1/4 Teaspoon
Lemon juice 1 Teaspoon
Crumbled goat cheese 1/2 Cup (8 tbs)



In a colander, place peas and pour boiling water over it. Allow to drain.

In a large bowl, combine celery stalk, minced mint, parsley, salt, lemon juice, goat cheese and mix well.

Combine goat cheese mixture with peas.



Serve and enjoy!
