Vegan Caesar Salad

Vegan Caesar salad dressing made with soaked blended cashews and avocado. No raw eggs means it's safe for pregnant women like me to eat, too! :) If you're not vegan nut just want an egg-free Caesar dressing, use this basic recipe and add anchovies for the classic Caesar dressing flavor.

Ingredients

Romaine lettuce head 1
Croutons 1/4 Cup (4 tbs)
Grated parmesan 1/4 Cup (4 tbs) ((optional))
For dressing:
Cashews 1/4 Cup (4 tbs)
Garlic 1 Clove (5 gm)
Lemon juice 1/4 Cup (4 tbs)
Ripe avocado 1/4
Drained capers 1 Teaspoon (1
Water 1/2 Cup (8 tbs)
Salt 3/4 Teaspoon
Fresh black pepper To Taste

Directions

GETTING READY:

Soak cashews in a water for 4-12 hours. Drain the water once done.

Wash, tear and refrigerate lettuce.

MAKING:

In a blender, blend together soaked cashews, garlic, lemon juice, avocado, capers, salt and pepper. Adjust quantity of water as per requirement.

In a large bowl, toss lettuce with prepared dressing. Garnish with croutons and parmesan (optional).

SERVING:

Serve and enjoy!
