Vegan Caesar salad dressing made with soaked blended cashews and avocado. No raw eggs means it's safe for pregnant women like me to eat, too! :) If you're not vegan nut just want an egg-free Caesar dressing, use this basic recipe and add anchovies for the classic Caesar dressing flavor.
Romaine lettuce head | 1 | |
Croutons | 1/4 Cup (4 tbs) | |
Grated parmesan | 1/4 Cup (4 tbs) (optional) | |
For dressing: | ||
Cashews | 1/4 Cup (4 tbs) | |
Garlic | 1 Clove (5 gm) | |
Lemon juice | 1/4 Cup (4 tbs) | |
Ripe avocado | 1/4 | |
Drained capers | 1 Teaspoon (1 | |
Water | 1/2 Cup (8 tbs) | |
Salt | 3/4 Teaspoon | |
Fresh black pepper | To Taste |
GETTING READY:
1.Soak cashews in a water for 4-12 hours. Drain the water once done.
2.Wash, tear and refrigerate lettuce.
MAKING:
3.In a blender, blend together soaked cashews, garlic, lemon juice, avocado, capers, salt and pepper. Adjust quantity of water as per requirement.
4.In a large bowl, toss lettuce with prepared dressing. Garnish with croutons and parmesan (optional).
SERVING:
5.Serve and enjoy!
