The Body Coach Joe Wicks is back and shows you that healthy salads don't have to be boring! This week he shows you how to make a delicious spicy chilli prawn salad garnished with lime and cashew nuts.
|King prawns||180 Gram|
|Bell pepper||1 , sliced|
|Cherry tomatoes||1/2 Cup (8 tbs) , halved|
|Courgette||1/2 , sliced|
|Fresh salad leaves||3 Cup (48 tbs)|
|Crushed chili||1 Teaspoon|
|Lime||1/2 , juiced|
|Fresh coriander||1 Tablespoon|
|Coconut oil||1 Teaspoon|
|Cashew nuts||1/4 Cup (4 tbs) (handful)|
|Extra virgin olive oil||2 Tablespoon|
In a frying pan, heat coconut oil and when it melts add prawns to it.
Fry the prawns for few minutes and add chiles, lime juice and mix well. Cook until the prawns turn pink.
In a large bowl, place a layer of salad leaves. Add courgettes, pepper and tomatoes to that bowl. Add cooked prawns mixture and top with olive oil. Garnish with cashew nuts and chopped coriander.
Serve and enjoy!
