Endive Boats with Fresh Mango Chicken Salad

Do you have a favorite Go-to appetizer? Think about switching it up with fresh mango. These endive boats with mango chicken salad will soon become your favorite.


Sour cream 1 Cup (16 tbs)
Mayonnaise 1 Cup (16 tbs)
Lemon juice 2 Tablespoon
Chopped parsley 2 Tablespoon
Chopped tarragon 1 Tablespoon
Salt To Taste
Pepper To Taste
Mango 1 Large , sliced
Chicken 2 Cup (32 tbs) , boiled, shredded
Celery 1 Cup (16 tbs) , chopped finely
Green onion 3/4 Cup (12 tbs) , divided
Endive leaves 8
Toasted macadamia nuts 1/4 Cup (4 tbs)



1.  For the dressing, in a bowl combine sour cream, mayonnaise, lemon juice, parsley, tarragon, salt and pepper. Stir well and set aside.

2.  In another bowl, add the chicken along with celery, green onion and mango slices. Pour the prepared dressing on top and toss to coat well.



3.  Fill the endive boats with the salad, garnish with some green onion, mango slices and toasted macademia nuts. Serve.
