Remmi creates a healthy vitamin rich salad in this 5th episode of Cook Time with Remmi.
|Romaine||4 Cup (64 tbs) , chopped 1” slice|
|Cantaloupe||2 Cup (32 tbs) , medium diced|
|Cucumber||1⁄2 , peeled/sliced thin in rounds|
|Thinly sliced sweet onion||1⁄4 Cup (4 tbs)|
|Fresh lime juice||1 Tablespoon|
|Light oil||1 Tablespoon|
|Salt and pepper||To Taste|
|Fresh mint/Parsley||1 1⁄2 Tablespoon|
For the dressing - In small bowl mix lime juice, oil and honey.
In medium bowl add cantaloupe, cucumber, and onion.
Pour dressing on the cantaloupe mixture. Season with salt and pepper.
On a medium platter place the lettuce leaves. Spoon cantaloupe mixture onto the lettuce. Garnish with mint or parsley. Serve and enjoy.
