Delicious Chicken Salad The Healthy Way

When making chicken salad, I have to say, that seasoning your chicken well or using a rotisserie chicken is going to give you the best tasting chicken salad ever.

Using a rotisserie will also save you time, and the flavor is amazing. Just remember to use or add the chicken after it's been chilled.


Low fat mayonnaise 1/4 Cup (4 tbs)
Plain greek yogurt 1/4 Cup (4 tbs)
Fresh lemon juice 1 Teaspoon
Salt and pepper To Taste
Garlic powder 1/4 Teaspoon
Cooked chicken breast 2 Cup (32 tbs) , chopped into bite size pieces
Celery 1 , finely diced
Green onion 1 , finely diced
Raw cashews 1/4 Cup (4 tbs) , chopped
Fresh parsley 1 Tablespoon , chopped
Red grapes 30 , halved



In a large bowl, whisk together low fat mayonnaise, plain Greek yogurt, fresh lemon juice, salt and pepper and garlic powder.

Add in the chicken, celery, green onion, cashews and parsley. Toss well.

Add in the red grapes and toss again.


Serve the salad over the lettuce and avocado.
