Fruit and Vegetable Salad with low calorie Thousand Island dressing, not just for weight-watchers, but for everybody, this delicious salad also contains all the vitamins A and C needed for the eyes and a glowing complexion. Eating raw fruits and vegetables preserves both fibre and other nutrients.


For vegetable and fruit salad
Iceberg lettuce 1 Cup (16 tbs) , torn into pieces
Capsicum cubes 1/4 Cup (4 tbs)
Grated carrot 1/2 Cup (8 tbs)
Finely chopped celery 2 Tablespoon
Cubed apple 2 Cup (32 tbs)
Orange segments 1/2 Cup (8 tbs) , cut into halves
Chopped raisins 2 Tablespoon (Optional)
For low calorie thousand island dressing
Hung low fat curd 1/2 Cup (8 tbs)
Tomato ketchup 1 1/2 Tablespoon
Chili sauce 1 Teaspoon
Sugar 1 Teaspoon
Mustard powder 1/4 Teaspoon
Finely chopped onion 2 Teaspoon
Finely chopped capsicum 2 Teaspoon
Finely chopped green chili 1 Teaspoon
Salt To Taste
Low fat milk 2 Tablespoon



For Low-Calorie Thousand Island Dressing

1. In a bowl, combine hung curd, ketchup, chili sauce, sugar, mustard powder, onion, capsicum, green chili, salt and milk. Mix well.



2. In a large bowl, combine lettuce, capsicum, carrot, celery, apple, orange, and raisins.

3. Add Thousand Island dressing and toss well.



4. Serve immediately and enjoy!



1 cup of low-fat curd gives ½ cup of hung low fat curd.
