Betty's Fresh Spring Greens

Betty demonstrates how to make Fresh Spring Greens. This is a healthy salad that is full of fresh garden vegetables.


Baby spinach 3 Cup (48 tbs) , torn into pieces
Romaine lettuce 3 Cup (48 tbs) , torn into pieces
Purple cabbage 1 1/2 Cup (24 tbs) , finely chopped
Grape tomato 2 Cup (32 tbs)
Sliced english cucumbers 2 Cup (32 tbs) ((half
Sliced green onion tops 1/2 Cup (8 tbs)
Green bell pepper 1/3 , cut in half
Red bell pepper 1/3 , cut in half
Yellow bell pepper 1/3 , cut in half



1. In a large bowl, add spinach, lettuce, and cabbage. Toss well.

2. Add tomatoes, cucumbers, green onions, green bell pepper, red bell pepper, and yellow bell pepper. Toss gently.



3. Serve immediately with a dollop of thousand island dressing on top and breadsticks on side. You can also cover with plastic wrap and refrigerate until serving time.
