Egg Salad

Lynn demonstrates how to make a delicious egg salad. This makes a great sandwich, spread for crackers or you can put it in a lettuce leaf and make a salad. From Emeril.


Hard boiled eggs 12 , roughly chopped
Salt 1/2 Teaspoon
Dry mustard 1 Teaspoon
Hot hungarian paprika/Smoked paprika 1/2 Teaspoon
Minced shallot 1/4 Cup (4 tbs)
Chopped green onion/Fresh parsley leaves 1/4 Cup (4 tbs)
Minced celery 1/4 Cup (4 tbs)
Mayonnaise 1/2 Cup (8 tbs)



In a large bowl, gently stir in all the ingredients.


Spread the salad over bread and make sandwich.
