Celebrate this Christmas with Lois' (Grandpa Luken's sister) Chocolate Roll. This festive snow white treat has been long enjoyed in our family over the Christmas years.

Ingredients

German sweet chocolate 4 Ounce
Butter 2 Tablespoon
Eggs 1 , beaten
Powdered sugar 1 Cup (16 tbs)
Mini marshmallow 2 Cup (32 tbs)
Toffee/Coconut 3/4 Cup (12 tbs)

Directions

MAKING

1. In a bowl, combine chocolate and butter. Pop in microwave for 30 seconds. Remove from oven, stir well and pop it back into the oven for 30 seconds. Repeat the process until chocolate melts, about 1 minute and 30 seconds.

2. In a separate bowl stir together egg and powdered sugar.

3. Slowly add the melted chocolate into the egg and sugar mixture. Stir constantly while adding in the chocolate so that the eggs do not curdle.

4. Add mini marshmallows and stir to combine. You may also lay the marshmallow on foil and pour chocolate mixture on top and then mix.

5. Onto a sheet of aluminum foil, pour the mixture and form into a log.

6. Then roll the log in coconut or toffee to coat. Wrap the aluminum foil around the chocolate roll and place in the freezer for 1 hour or until ready to serve.

SERVING

7. Slice into 1 inch pieces, serve and enjoy!
