Chocolate Raspberry Roll

Egg 6 , separated
Sugar 3/4 Cup (12 tbs) , divided
Compliments cocoa 1/3 Cup (5.33 tbs) (( 1/3 cup + 1 tablespoon))
Compliments pure vanilla extract 2 Teaspoon
Salt 1/4 Teaspoon
White chocolate 3 Ounce , chop
Light ricotta cheese 1 Cup (16 tbs)
Frozen orange juice concentrated 2 Tablespoon , thawed
18% table cream 2 Tablespoon
Raspberries 2 Cup (32 tbs)
Icing sugar 1 Tablespoon



1. Preheat oven to 375 degree.

2. Take a 15x10x1 inch greased baking dish, and line it with parchment paper. Keep it aside.


3. In a mixing bowl, with an electric mixer, beat egg white on high until soft peak form.

4. Keep beating on high, and slowly add ¼ cup of sugar to it.

5. In another bowl, beat egg yolks, continue beating, and add remaining sugar, a little at a time. Beat for 5 minutes or until the yolk becomes thick, and pale yellow in color.

6. Add 1/3 cup cocoa powder, vanilla, and salt to the yolks. Beat to mix well.

7. Using a spatula, gently fold the yolk mixture into the mixing bowl containing egg white.

8. Pour the mixture on baking dish and spread it evenly. Place it in centre of oven and bake for about 15 minutes or until it springs back when touched gently.

9. In the meantime, for filling, take a bowl, put white chocolate in it and place it in microwave for 1 minute. Stir and mix until smooth.

10. Add ricotta cheese, orange juice and cream into bowl with chocolate. Mix well.

11. Spread a tea towel on table, dust 1 tablespoon cocoa powder all over the top.

12. Loosen the cake from dish, and invert it on towel. Remove the parchment paper.

13. While the cake is still warm, using the tea towel to separate, tightly roll it into a log.

14. Unroll the cake and spread ricotta filling evenly over it. Spread raspberries on top. Roll it back into a nice and tight log with towel. Carefully remove the towel and transfer it to a serving dish.


15. Serve raspberry roll cake with icing sugar dust on top.
