Lamb Cutlets with Cucumber

Cucumber 1 Medium
Butter 2 Ounce
Salt To Taste
Pepper To Taste
Lamb cutlets/4 lamb loin 8 (from best end of neck)
Egg 1 , beaten
Crisp breadcrumbs 1 Ounce
Fat/Butter 2 Ounce (for frying cutlets)
Gravy 1/4 Pint
Parsley 1 Tablespoon (for garnish)



1) Peel cucumber, remove seeds and cut the flesh into dices.


2) In a saucepan, heat butter and add cucumber, salt, pepper. Cover the pan and cook for 30 minutes or until tender.

3) Apply a coat of beaten egg on the cutlets and then coat with crumbs.

4) In a frying pan, heat butter and brown cutlets from both sides on low heat for 10 minutes.

5) Plate the cutlets in a serving dish.


6) Garnish the cutlets with parsley and serve with gravy.
