Pink Party Roll

Ingredients

Heavy cream 3 Cup (48 tbs)
Cherry preserves 1 Cup (16 tbs)
Salt 1/8 Teaspoon
Almond extract 1/4 Teaspoon
Chocolate wafers 24
Cherry preserves 2 Tablespoon
Red food color 3 Drop

Directions

MAKING

1) In a bowl, whip 2 cup heavy cream.

2) Finely chop the 1 cup cherry preserves with a vegetable chopper.

3) Fold the chopped preserves into the whipped cream.

4) Season the mixture with salt and almond extract.

5) Top the chocolate wafer with heaped teaspoonful of whipped cream mixture and cover with another.

6) In a similar way, make 3 stacks of 8 wafers each.

7) Place the wafer stacks sideways on several layers of waxed paper or freezer wrapping.

8) Place the stacks together with some more cream to make long roll.

9) Wrap the stacks tightly and freeze for about 4 hours until firm.

(Rolls can be stored in freezer about 2 weeks)

FINALIZING

10) In a bowl, whip 1 cup cream and fold in the 2 tblsp whole cherry preserves.

11) Add a few drops food color for a light pink colour.

12) Unwrap the frozen roll and frost with the whipped cream.

SERVING

13) Slice the roll diagonally in small slices and serve immediately.
