Betty's Country Ham Rolls -- Derby Day, 2016

Betty demonstrates how to make Country Ham Rolls. This is a traditional entree that can be served on Derby Day for breakfast, brunch, lunch, or dinner.

Ingredients

Olive oil 2 Tablespoon
Country ham slices 8 Ounce (biscuit cuts)
Potato rolls 8

Directions

Making

Heat an iron skillet over medium heat. Add olive oil and heat until oil shimmers.

Add the 8 pieces of country ham in a single layer in the hot skillet.

Reduce heat to medium-low and cook ham for 2 minutes on each side. Transfer to a platter lined with paper toweling.

Slice potato rolls into 2 halves.

Place a cooked ham piece on bottom half of roll and place top half of roll over ham.

Place on a nice serving plate. Repeat until all ham and/or rolls are used up.

Note: You may use any roll recipe, or buy ready-to-serve rolls. You may also substitute biscuits in place of the rolls for Country Ham Biscuits.
