Betty demonstrates how to make flavorful Turkey Croquettes. This is a wonderful recipe for using leftover turkey (or chicken).

Mushroom | 1 Cup (16 tbs) , coarsely chopped | |
Fine dry bread crumbs | 2 Cup (32 tbs) | |
Chicken broth | 1 1/2 Cup (24 tbs) | |
Finely chopped onion | 1 Teaspoon | |
Melted butter | 1/2 Cup (8 tbs) | |
Finely chopped celery | 1/2 Cup (8 tbs) | |
Salt | 1/2 Teaspoon | |
Lemon juice | 1/2 Teaspoon | |
Ground red pepper | 1/8 Teaspoon | |
Finely chopped parsley | 1 Tablespoon | |
For coating | ||
Fine dry bread crumbs | 2 Cup (32 tbs) | |
For egg wash | ||
Egg | 1 , beaten | |
Water | 2 Tablespoon |
GETTING READY
1. In a large bowl, soak breadcrumbs in broth.
2. Grind turkey or chicken along with mushroom and set aside.
MAKING
3. In a bowl, combine grounded meat mixture and soaked breadcrumbs.
4. Add onion, butter, celery, salt, lemon juice, red pepper, and parsley. Stir well.
5. Shape the mixture into 1 ½-inch croquettes, place in a greased baking dish and chill for 1-2 hours.
For Coating:
6.In a shallow dish, place the dry breadcrumb and set aside.
For Egg Wash:
7. In a separate bowl, beat egg with 2 tablespoons of water.
8. In a pot heat 1 ½- inch oil until it reaches 350 degree F.
9. Dip chilled croquettes into breadcrumbs, then into egg wash, then into breadcrumbs again. Deep fry the croquettes in oil until golden brown. Remove from oil and place on paper towel to drain.
SERVING
10. Serve hot and enjoy!
TIPS
You can also bake the croquettes instead of deep frying.
