HelloFresh Shrimp with Asparagus and Risotto

I am always looking for easy recipes, that taste great and are healthy! Here's one for you to try: Shrimp with Asparagus and Risotto. Yummy! All of it delivered to my house by Hello Fresh, ready to cut and cook.

Ingredients

Onion 1
Asparagus 100 Gram
Celery 1 Small
Water 4 Cup (64 tbs)
Stock concentrate 10 Gram
Olive oil 2 Tablespoon
Garlic 1 Clove (5 gm)
Shrimp 100 Gram
Parmesan cheese 20 Gram , divided (reserve some for garnishing)
Rice 200 Gram
Salt and pepper To Taste
Butter 2 Tablespoon

Directions

MAKING

In a small pan, pour water and stock concentrate.

In another pan, put some oil and cook onion, celery and half garlic for about 5 minutes until soft.

Meanwhile, cook asparagus in the simmering stock for about 30 seconds.

Move asparagus from pot to bowl and set aside.

Mix rice into the pot of celery and onion. Season with salt and pepper. Pour some leftover chicken stock and simmer for some time.

Add butter in risotto and th of parmesan cheese.

In the mean time, take a different pan and pour some oil, cook shrimp for couple of minutes. Add asparagus and garlic for 30 seconds.

Add it to risotto and stir properly.

FINALIZING

Sprinkle with parmesan.

SERVING

Serve as dinner or lunch.
