Cheesy Baked Rice with Vegetables by Tarla Dalal

This cheesy baked rice is surely a big hit for parties. . Rice cooked in butter gives a very nice taste and aroma to this recipe. . Vegetables with rice and cheese baked to perfection is definately a filling meal.


For butter rice mixture
Cooked rice 1 1/2 Cup (24 tbs)
Butter 2 Tablespoon
Milk 1/3 Cup (5.33 tbs)
Salt To Taste
For vegetable sauce
Butter 1 1/2 Tablespoon
Finely chopped onion 1/4 Cup (4 tbs)
Plain flour 1 1/2 Tablespoon
Finely chopped green chili 1 Teaspoon
Milk 1 1/2 Cup (24 tbs)
Ground black peppercorn 1/2 Teaspoon , finely ground
Boiled mixed vegetables 1 1/2 Cup (24 tbs) (French beans , carrot , cauliflower and green peas)
Grated processed cheese 2 Tablespoon
For topping
Grated processed cheese 3 Tablespoon



For Butter-Rice Mixture:

1.In a non-stick pan, heat butter, add rice, milk and salt. Stir and cook over medium flame for a minute.

2.Mash the butter-rice mixture using a potato masher and cook for another 1-2 minutes. Set aside.

For Vegetable Sauce:

3.In a broad non-stick pan, heat butter and sauté onion over medium flame for 1-2 minutes.

4.Add plain flour, mix well and saute for 1 more minute.

5.Add green chili and milk. Stir constantly and cook for 2-3 minutes.

6.Season with salt and pepper. Cook for another 1 minute, while stirring continuously.

7.Stir in vegetables and cheese. Stir constantly and cook over medium flame for 1-2 minutes. Remove pan from heat and set aside.


8.Just before serving, in a 6-inch baking dish, spread the prepared rice-butter mixture at the bottom.

9.Pour vegetable sauce on top and spread evenly.

10.Sprinkle cheese and bake in a preheated oven at 200 degree C or 400 degree F for 15-20 minutes.


11.Serve immediately.


Before layering and baking, if the rice and the vegetable sauce are a little dry, add 2 tbsp of milk to it and mix well.
