Chicken Brown Rice With Spinach Yoghurt

Succulent pieces of chicken accentuates the brown rice flavor and tastes divine with spinach yoghurt. Complete meal in every sense, providing almost all the essential nutrients.

Ingredients

Chicken brown rice
Rice bran oil 1 Tablespoon
Onion 1 , sliced
Chicken breast boneless skinless 1 , diced
Garlic paste 1 Tablespoon
Ginger paste 1 Tablespoon
Salt To Taste
Red chilli powder 1 Tablespoon
Green pepper 1 , diced
Water 3 Cup (48 tbs) , hot
Brown rice 1 Cup (16 tbs) (soaked for about 2 hours and drained)
Spring onions and tops 1 , chopped finely (Optional)
Spinach yoghurt
Rice bran oil To Taste
Onion 1 , chopped finely
Low fat yogurt 1 Cup (16 tbs)
Skim milk 1/2 Cup (8 tbs)
Cumin powder 1 Teaspoon
Spinach leaves 150 Gram (Steamed and chopped)

Directions

CHICKEN BROWN RICE:

MAKING

1. Heat oil in the skillet on medium flame. Add sliced onions and saute till brown.

2. Add the chicken pieces, mix well, saute for few seconds.

3. Add ginger and garlic paste, salt and red chilly powder. Cook for few minutes on medium flame.

4. Add green pepper and stir well. Cook for few minutes.

5. Add hot water and rice. Cover it, let it cook till done or till the water evaporates on medium flame. Stir in between.

6. Once done, fluff it with fork, garnish with chopped green onions and tops keep it aside.

SERVING

SPINACH YOGHURT:

MAKING

1. Heat oil on medium flame, saute onions for few seconds, keep aside.

2. Put yogurt in bowl, beat it lightly and add milk. Mix them well.

2. Add salt and cumin powder, mix.

3. Add spinach leaves and onions, mix lightly.

SERVING

4. Serve hot chicken brown rice with a portion of spinach yoghurt on side.
