Indonesian Satay Beef Kebabs with Jasmine Rice

Ingredients

For the marinade:
Top sirloin steak 2 Pound , cut into 1/4
For the marinade
Garlic 3 Clove (15 gm) , sliced
Onion 1/2 , chopped
Chopped fresh cilantro leaves 1 Tablespoon
Freshly squeezed lime juice 2 Tablespoon (About 2 Tablespoons)
Olive oil 1 Tablespoon
Jasmine rice 2 Cup (32 tbs) (For The Rice:)
For the peanut sauce
Canned coconut milk 2 Cup (32 tbs)
Lemongrass stalk 1 , thinly sliced (Use Fresh)
Peanut butter 1/2 Cup (8 tbs)
Onion 1 , minced
Red chili powder/Cayenne 1 Teaspoon (Use Pure)
Brown sugar 1 Tablespoon
Red chile powder/Cayenne 1 Teaspoon (Use Pure Variety)
Asian fish sauce 1 Tablespoon
Soy sauce 1 Tablespoon
Toasted grated coconut 1/4 Cup (4 tbs) (For Garnish)
Shaved coconut 1/4 Cup (4 tbs) , toasted (For Garnish)

Directions

GETTING READY

1) Preheat the broiler or grill.

2) Thread the beef on skewers, place in a deep dish and keep aside.

3) In a food processor or blender, add all the marinade ingredients and puree until smooth.

4) Pour the marinade over the skewered beef, cover and allow to marinate for 1 hour at room temperature.

MAKING

5) In a saucepan, thoroughly rinse, drain and place the rice, cover with 2 1/2 cups of water and bring to a boil.

6) Simmer covered over a low heat for 5 to 10 minutes, until the water is absorbed and the rice is just cooked. Cover and keep warm.

7) In a saucepan, add the coconut milk and lemongrass, bring to a boil then simmer over a low heat for 10 minutes.

8) Turn off the heat, strain the sauce through a fine-mesh sieve into a saucepan, stir in rest of the ingredients and bring to a boil, then keep warm over a very low heat.

9) Remove and place the skewers on the grill or under the broiler) and cook for 2 to 3 minutes, turning frequently.

SERVING

10) On each serving plate, spoon the rice in the center, arrange the skewers over each serving and drizzle with the peanut sauce. Garnish with the coconut, if desired and serve immediately.
