Pineapple fried rice is a magical creation of sweet, savory, and spicy all combined into a meal that only needs one hot wok to prepare!

Ingredients

Coconut oil 3 Tablespoon
Eggs 2 , beaten with a dash of salt
Ham 1 1/2 Cup (24 tbs) , diced
Fresh pineapple 1 1/2 , chopped
Diced red bell pepper 3/4 Cup (12 tbs)
Green onions 1 1/2 Ounce (((white and green parts, 1/2 bunch)))
Soy sauce 1 Tablespoon
Garlic 3 Clove (15 gm) , minced
Sriracha To Taste
Lime 1 , halved
Unsalted cashews 1/2 Cup (8 tbs) , chopped
Jasmine rice 4 Cup (64 tbs) , cooked and chilled
Kosher salt To Taste
Cilantro sprigs 2 (((for garnish)))
