Two beautiful Rib Roasts of Wild Boar cooked on the Big Green Egg!
Bone in rib roast of wild boar | 3 1/4 Pound (2 ribs) | |
Stone ground mustard | 1/2 Cup (8 tbs) (as needed) | |
Sea salt | To Taste | |
Ground black pepper | To Taste | |
Granulated garlic | To Taste | |
For apple bourbon glaze: | ||
Apple juice | 1 1/2 Cup (24 tbs) | |
Bourbon | 1 Cup (16 tbs) | |
Apple cider vinegar | 1/2 Cup (8 tbs) | |
Honey | 1/2 Cup (8 tbs) | |
Packed brown sugar | 1/2 Cup (8 tbs) | |
Pickling spice | 1 1/2 Tablespoon (mustard, coriander, peppercorn, allspice, bay leaf, red pepper, cloves, and crushed red pepper) |
GETTING READY
1. Rub meat generously with mustard and season with sea salt, ground black pepper, and granulated garlic.
2. Preheat big green egg to 450 degree F.
MAKING
3. Place meat on grill, cover and cook for 10 minutes. Reduce the flame to 325 degree F and cook for 1 ½-2 hours or until the internal temperature at 155 degree.
For Apple Bourbon Glaze:
4. In a saucepan, combine apple juice, bourbon, vinegar, honey, brown sugar, and pickling spice. Bring to a boil and reduce by half.
5. Baste meat with glaze in the last 15 minutes of cooking. Remove meat from heat, tent with foil and let rest.
SERVING
6. Carve meat and serve with grilled vegetables like parsnip, carrot, apple coated with cinnamon and sugar cooked over 350 degree F for 20-30 minutes.
