Spare ribs rack | 2 , trimmed | |
Seasoning rub | 2 Tablespoon (beef rub as needed) |
GETTING READY
1. Preheat barrel cooker.
MAKING
2. Trim the meat, remove membrane and season it with rub on both sides.
3. Insert the hooks as shown in the video and hang in the cooker. Cover and cook for 3 hours. Cook for another 35 minutes, checking after every 15 minutes or until meat tender.
SERVING
4. Remove meat from cooker, brush glaze on it, cut into slices and serve.
