Smoked Baby Back Ribs

So this is my second attempt on my newly built UDS cooking some baby back ribs. If you've watched my first attempt you will see that I was having issues with too much smoke and getting the temps up to where they needed to be. This time I used Cowboys lump charcoal and also raised the charcoal basket up a few inches. I was also waited longer for the coals to set in. The ribs came out great. They were moist and flavorful.


For the rub
Brown sugar 4 Tablespoon
Paprika 4 Tablespoon
Kosher salt 3 Tablespoon
Onion powder 1 Tablespoon
Garlic powder 1 Tablespoon
Rubbed sage 1 Teaspoon
Cumin powder 1 Teaspoon
Wasabi 1 Teaspoon
Chilli powder 2 Tablespoon
Chipotle chili powder 1 Tablespoon
Old bay seasoning 1 Tablespoon
Cinnamon powder 1 Teaspoon
Turbinado sugar 2 Tablespoon
For ribs
Baby back rib rack 2 Large
Brown sugar 1/2 Cup (8 tbs)
Apple juice 1/5 Cup (3.2 tbs) (for spraying)
Guinness sauce 1/2 Cup (8 tbs)



1. In a bowl put all the ingredients for the rub and whisk well to mix and set aside.

2. With clean hands pull out the membrane off the ribs and discard it.


3. Sprinkle generously with the rub, spread and massage the ribs well with it.

4. Put the brown sugar over the ribs and leave it to marinate until the smoker is ready.

5. Preheat the smoker, raise the charcoal basket and let it reach to the temperature just above 250 F.

6. Place the ribs on the grill in smoker, cover and let it cook for 1 hour.

7. After about 1 hour, spray the ribs with apple juice, cover and let it cook for 3 hours, spraying it after every 1 hour.

8. Brush the ribs all over with the guiness sauce, cover and cook for 30 minutes more.

9. Remove the ribs from the smoker and place it on chopping board and cut it in individual ribs.


10. Serve hot as desired.
