Bacon Wrapped Country Style Baby Back Ribs

Sometimes food needs to be on a stick. Tailgate food is a perfect example of this, something to hold onto and eat while walking around talking to friends. These Bacon Wrapped Country Style Baby Back Ribs are a perfect example of Tailgate food heaven. No they are not rally Baby Back Ribs and they arent quite Country Style ribs either but I got a big chuckle when I read the label at the grocery store calling them Country Style Baby Back Ribs so I stuck with their clever marketing verbiage.

The sauce I used is from Not Ketchup and is fruit based that worked out perfectly as a glaze for this recipe.

Ingredients

Baby back ribs 1 Pound
Smoked bacon slices 6
Bbq rub 1/2 Cup (8 tbs)
Glaze 1/4 Cup (4 tbs) (((Blueberry and white pepper from NOT KETCHUP)))
Red potatoes 4 , chopped

Directions

GETTING READY

1. Marinate the ribs with the bbq rub coated all over for several hours in the refrigerator.

2. Prepare the grill dome for cooking.

MAKING

3. Skewer the ribs and then wrap bacon on them and secure them with a toothpick.

4. Place potatoes on a tray and put them on the grill to roast.

5. Place the ribs on the grill, close the dome lid and let it cook until it reaches 150 F internal temperature.

6. Pull the potatoes when done.

7. Put the blueberry white pepper sauce from Not ketchup all over the ribs. Cook it for some more time.

SERVING

8. Prepare a bed of roasted potatoes on the serving dish. Put the baby back ribs over the top and serve.
