Sunshine Lemon Herb Punch

Nothing reminds me of summer like the flavor of lemon!

One of my favorite ways to infuse lemon into food and drinks is with lemon herbs. Lemon Balm is a member of the mint family, and is often used to flavor tea. Lemon Verbena is a very versatile herb that can also be used in flavoring tea, but is often incorporated into delicious sauces and desserts as well.

To create a tasty beverage using both of these delectable herbs, try this Sunshine Lemon Herb Punch:

Ingredients

Simply peel and core half of a large pineapple, and cut into 1" chunks. Place them in a glass pitcher and, add in a 46 ounce can of pineapple juice, 1/3 cup of freshly squeezed lemon juice, 9 Lemon Balm leaves and 3 stalks of Lemon Verbena.

Directions

Chill this mixture overnight. Then remove the whole herbs, and add in 4 ounces of ginger ale, 1/8 cup of sweetened lime juice and 3 lemons thinly sliced into rounds. Pour into glasses, garnish with a lemon slice, and enjoy!
