In this video, Betty demonstrates how to make Cheese Pastry Puffs for Christmas. These are great when filled with Holiday Turkey salad and served as an appetizer.

Butter 1/4 Cup (4 tbs)
Water 1/2 Cup (8 tbs)
All purpose flour 1/2 Cup (8 tbs)
Salt 1 Pinch
Eggs 2
Shredded swiss cheese 1/2 Cup (8 tbs)

1. Line a shallow baking pan with parchment paper and set aside.

2. Preheat oven to 400 degree F.

3. In a medium-sized pot, combine butter and water. Stir and bring to a boil.

4. Add salt and flour, stir briskly over medium heat until the mixture forms a ball and leaves the sides of the pot. Remove the pan from heat and cool for 3 minutes.

5. Add egg, one at a time, and beat well after each addition. Beat for 1-2 minutes or until smooth. Stir in cheese.

6. Scoop 1-teaspoon of mixture at a time and form into ball. Place them on lined baking pan and pop in oven. Bake for about 14 minutes or until puffed and golden.

7. Remove from oven and pierce each pastry puff with a knife to allow steam to escape. Cool them completely on wire rack.

8. Cut tops off pastry puffs and fill with Turkey salad. Place cap back on and serve.
