Steamed Holiday Pudding

Ingredients

All purpose flour 2 1/3 Cup (37.33 tbs)
Suet 1 1/3 Cup (21.33 tbs) , finely chopped
Firmly packed brown sugar 1 1/3 Cup (21.33 tbs)
Salt 1/2 Teaspoon
Ground cinnamon 1/4 Teaspoon
Ground cloves 1/4 Teaspoon
Ground ginger 1/4 Teaspoon
Ground nutmeg 1/4 Teaspoon
Eggs 2 , well beaten
Orange juice 2/3 Cup (10.67 tbs)
Water 1/3 Cup (5.33 tbs)
Raisins 1 1/3 Cup (21.33 tbs) , chopped
Mixed candied fruit 1 1/3 Cup (21.33 tbs) , chopped
Currants 1 1/3 Cup (21.33 tbs)
Dried figs 2/3 Cup (10.67 tbs) , finely chopped
Hard sauce 2 Tablespoon (Commercial)

Directions

MAKING

1) Take a large size bowl and combine the first 8 ingredients in it. Mix nicely.

2) Add orange juice, eggs and water. Stir nicely.

3) Take another bowl and mix together candied fruit, raisins, currants and figs in it. Add to the flour mixture, stirring nicely.

4) Take a 1 1/2 quart steam pudding mold and grease it. Spoon the prepared mixture into it and cover tightly.

5) Place the mold on a shallow rack inside a large and deep kettle. There should be enough boiling water to come two-thirds up the mold.

6) Cover kettle and steam pudding for about 5 hours in constantly boiling water (replace water, if needed).

7) Let the pudding stand for about 5 minutes.

SERVING

8) Unmold and serve with hard sauce.
