Banana and Coconut Pudding

Ingredients

Coconut 1 Small , freshly grated
Coconut milk 1/2 Pint
Sugar 1 Tablespoon
Ripe bananas 2
Whole eggs 2

Directions

GETTING READY

1) Preheat the oven to 375 °F

2) In a bowl, beat the eggs and stir in the sugar and coconut milk.

3) Peel the bananas and mash using potato masher.

MAKING

4) In another bowl, mix together mashed bananas, grated coconut, eggs and coconut milk.

5) Stir the banana mixture well together.

6) Transfer the banana mixture into a pie dish.

7) Bake the mixture in the oven until set, for about three quarters of an hour.

8) Remove the pudding from oven and allow to cool.

SERVING

9) Slice the pudding in squares and serve hot or cold.
