Steamed Plum Pudding

Ingredients

For plum pudding
Firmly packed brown sugar 3/4 Cup (12 tbs)
Butter 1/2 Cup (8 tbs) , softened (Land O Lakes)
Eggs 3
Dried bread crumbs 3/4 Cup (12 tbs)
All purpose flour
Cinnamon 1 Teaspoon
Baking soda 1/2 Teaspoon
Ground nutmeg 1/2 Teaspoon
Salt 1/4 Teaspoon
Ground cloves 1/4 Teaspoon
Carrots 2 Medium , shredded to make 1 cup
Golden raisins 1 Cup (16 tbs)
Dried currants 1/2 Cup (8 tbs)
Canned purple plums 30 Ounce , drained, pitted and chopped (1 Can)
Chopped dates 8 Ounce (1 Package)
Grated orange peel 1 Tablespoon
For hard sauce
Powdered sugar 3 Cup (48 tbs)
Dark rum/Orange juice 1/4 Cup (4 tbs)

Directions

MAKING

1) Split a vanilla bean lengthwise.

2) Scrape out the insides of the bean and place the powder in a medium bowl.

3) Stir in sugar till well blended.

4) Stir in all the remaining ingredients except boiling water and whipped cream.

5) For each serving, place 3/4 cup boiling water in a large mug.

6) Stir in 1/4 cup cocoa mix.

SERVING

7) Dollop with whipped cream and serve.
