Cherry Crown Pudding

Ingredients

Maraschino cherries 8 , well drained
Yellow cake mix 12 Ounce (1 Package)
Pecans 1/4 Cup (4 tbs) , chopped
Ground mace 1/4 Teaspoon
10x confectioners sugar 2 Tablespoon (Or As Needed)

Directions

GETTING READY

1) Generously grease in 4-cup tube mould.

2) Place the cherries in bottom of the mould to form a pretty pattern.

MAKING

3) In a bowl, prepare cake mix, as per the label directions.

4) Stir in the pecans and mace, and spoon over cherries.

5) Using foil, cover the mould, or double thickness of wax paper; secure with string to hold tightly.

6) Put on rack or trivet in kettle or steamer; pour in boiling water to half the depth of pudding in mold; cover tight.

7) Allow to cook in steam for 1 1/2 hours, or until a wooden skewer inserted near center comes out clean.

8) Leave aside for 5 minutes to cool.

FINALIZING

9) Using a knife, loosen the pudding around edges.

10) Unmold on a serving plate, and dredge with 10X sugar.

11) Using a brush apply cherry topping with honey or white corn syrup to give it extra sparkle, if desired.

SERVING

12) Slice the pudding into wedges and serve warm with whipped cream, lemon sherbet or vanilla ice cream, if desired.
