Apple And Blackberry Pudding

Self raising flour
Vegetable suet 2 1/2 Ounce (75 Gram)
White breadcrumbs 4 Ounce (100 Gram)
Orange 1 Large , finely grated zest and juice of
Milk 5 Tablespoon
Butter 1 Ounce (25 Gram)
Apple 1 Large , peeled, cored and roughly chopped
Blackberries 4 Ounce (100 Gram)
Caster sugar 4 Ounce (100 Gram)
Pouring cream 1/4 Cup (4 tbs) (For Serving)



1) Preheat the oven to 200°C.

2) In a bowl, sift together flour and salt.

3) Mix in suet, breadcrumbs, orange zest and just enough milk to make a soft crumble mix.


4) In a non-stick pan melt the butter and cook the apple for 5 minutes, until softened.

5) Mix the apple mixture with the suet mix.

6) Smear the suet mixture into 2 pint dish.

7) Dredge the blackberries over the suet mixture .

8) In a saucepan, place together orange juice, sugar and 125ml/ 4fl oz. water.

9) Heat the sugar mixture, stirring continuously, until dissolved.

10) Allow the sugar mixture to boil vigorously until pale golden.


11) Stream the sugar mixture over the pudding.

12) Allow the pudding to soak for 10 minutes.

13) Bake in the oven for 25 minutes, until golden brown on top.


14) Serve the Apple And Blackberry Pudding warm with scoop of ice cream if desired.
