Chia Seed Mixed Berry Puddings is a delicious way to try the popular new super food, Chia Seeds. This recipe is low carb, protein rich, gluten free, dairy free, vegan friendly and packed full of potassium, zinc, antioxidants and omega 3. Its healthy, but it also tastes amazing and is easily adapted to suit your own personal taste - give it a go!
Canned coconut cream | 270 Milliliter (1 can) | |
Water | 270 Milliliter (as needed) | |
Almond milk/Soy milk | 1 Cup (16 tbs) | |
Vanilla extract | 1 Teaspoon | |
Maple syrup/Honey, golden syrup, agave or similar sweetener | 1/4 Cup (4 tbs) | |
Black chia seeds | 3/4 Cup (12 tbs) | |
Mixed berries | 625 Gram (I used 500g of Strawberries and 125g of Blueberries) |
MAKING:
In a large bowl, combine coconut cream, water, almond milk, vanilla extract, maple syrup, chia seeds and mix well until well combined.
Cover with warp and allow to stand for 30 minutes. Stir well.
Assemble as shown in the video.
Cover and chill until serving.
