Twice Baked Potatoes

Twice baked potatoes are easy to make, and quite frankly add a little something extra to a meal. This fancy looking potato has all of the benefits of a baked potato, but it is served up for you in neat little package.

Ingredients

Potatoes 4 Medium , washed and dried
Vegetable oil 1 Tablespoon
Butter 1 Tablespoon , warmed
Sour cream 1/3 Cup (5.33 tbs)
Salt 1/2 Teaspoon
Freshly cracked black pepper 1/4 Teaspoon
Cheddar cheese 1/2 Cup (8 tbs) , divided
Sliced scallions/Chives 1/4 Cup (4 tbs)
Chopped cooked bacon 1/3 Cup (5.33 tbs)

Directions

GETTING READY

1. Preheat the oven to 350 degrees.

2. Rub the vegetable oil on the potatoes and bake for 45 minutes to 60 minutes or until the potatoes are done.

MAKING

3. Cut the top third off of the potato. Place the top meat of the potato into a bowl, and scoop the inside of the potato out.

4. Add in the butter, sour cream, salt, and pepper to the potatoes. Blend until the potato mixture is smooth.

5. Stir in half of the cheese, half of the scallions, and half of the cooked bacon into the potato mixture.

6. Fill the potato boats with the potato filling. Top with cheese.

7. Turn the oven onto broil and then broil the potatoes until the cheese turns golden brown.

SERVING

8. Top the twice baked potatoes with remaining scallions and bacon. Serve and enjoy!
