Betty's Roasted Sweet Potato Planks -- Christmas

In this video, Betty demonstrates how to make Roasted Sweet Potato Planks for the Christmas table. These are delicious and very healthy.


Sweet potatoes 3 (red or white)
Extra virgin olive oil/Melted butter 3 Tablespoon (as needed)
Ground sea salt To Taste
Ground black peppercorn To Taste



1. Line a 15x10x1-inch baking pan with aluminum foil.

2. Peel and slice the sweet potatoes lengthwise into 3/8-inch planks. Wash and pat dry the slices using paper towel.

3. Preheat oven to 425 degree F.


4. In the baking pan, place sliced sweet potato, drizzle olive oil and season them with salt and pepper.

5. Place aluminum foil over top of pan and seal edges with bottom piece of aluminum foil to make a packet.

6. Pop the pan in oven and bake for 15 minutes. Remove top piece of foil. Turn sweet potato planks over and adjust seasoning and oil, as desired. Bake for an additional 10 minutes or until fork-tender.


7. Remove from oven, transfer to a serving plate and serve immediately.
