A tasty twist on simple mashed potatoes - the sweet potato and zesty yogurt give this dish the upper hand on your festive holiday table.

Sweet potato | 2 Medium (about 1 pound total) | |
Russet potato | 2 Medium (about 1 pound) | |
Unsalted butter | 1 Tablespoon | |
Fresh flat leaf parsley | 2 Tablespoon , coarsely chopped | |
Finely chopped fresh sage | 1 Tablespoon | |
Coarse salt | 1 3/4 Teaspoon | |
Freshly ground pepper | 1 Pinch | |
Plain yogurt/Sour cream | 1/2 Cup (8 tbs) | |
For garnish | ||
Fresh flat leaf parsley | 1 Tablespoon , finely chopped |
GETTING READY
1. Preheat oven to 400 degree F. Place baking rack in the center and lower thirds.
2. On a piece of foil, place garlic cloves and drizzle oil on it.
3. Wrap garlic with foil to form a packet.
MAKING
4. Place garlic, and potatoes on center rack of the oven.
5. Pop a baking sheet in the lower rack for garlic drippings.
6. Bake for about 60 minutes or until potatoes are fork tender. Remove from oven and let it cool for 5 minutes.
7. Cut potatoes into half, and peel off the skin.
8. In a medium bowl, pass potato pieces through ricer.
9. Squeeze roasted garlic into the bowl.
10. Add butter, parsley, sage, salt, and pepper.
11. Drop yogurt and mix to incorporate.
SERVING
12. Serve potato mash immediately with parsley garnish.
