Greek Style Roasted Potatoes are a wonderful way to make potatoes. Growing up dinner was always a meat, two vegetables, and a starch. Often that starch was potatoes. These potatoes are simply marinated with lemon juice, garlic, and olive oil and then baked in the oven.
Russet potatoes | 6 Large , cut into wedges | |
Water | 1 Cup (16 tbs) | |
Olive oil | 1/2 Cup (8 tbs) | |
Lemon juice | 1/3 Cup (5.33 tbs) | |
Garlic | 3 Clove (15 gm) , chopped in large pieces | |
Sea salt | To Taste | |
Pepper | To Taste |
GETTING READY
1. Preheat your oven to 450 degrees.
2. Wash potatoes and scrub them well. Cut potatoes into quarters, if potatoes are extremely large cut each potatoes into eight pieces.
3. In a 9 x 13 inch baking dish, place the cut up potatoes.
4. Season potatoes with salt and pepper.
5. Add chopped garlic to the potatoes.
6. Mix marinade by combining water, olive oil, and lemon juice. Pour marinade over the potatoes, be sure to cover all of the potatoes.
MAKING
7. Cook potatoes for approximately 40 minutes, remove potatoes from the oven.
8. Turn potatoes so all sides can brown. Do this by placing the "white" portion of the potato on the bottom of the dish.
9. Place potatoes back into the oven for an additional 20-30 minutes. When you remove the potatoes they will be nice and golden brown.
SERVING
10. Serve right away as a side with any entrée.
