Potatoes 4 Medium , peeled
Finely chopped onion 2 Tablespoon
Eggs 2 , well beaten
All purpose flour 2 Tablespoon
Baking powder 1 Teaspoon
Salt 1 Teaspoon
Freshly ground black pepper 1/4 Teaspoon
Vegetable oil 1/4 Cup (4 tbs)
Sour cream 1 Tablespoon
Apple sauce 1 Tablespoon


1. In a large bowl of ice water, chill peeled potatoes for 2 hours. Grate coarsely. Place grated potatoes in a tea towel and press excess moisture from potatoes, until quite dry.

2. In a large bowl, combine potatoes, onion, eggs, flour, baking powder, salt and pepper; mix well.

3. In a large skillet, heat oil. Drop potato mixture, 2 tbsp (25 ml) at a time into hot oil. Cook 5 minutes, over moderate heat, on each side until golden brown.

4. Serve with sour cream and applesauce.
